October Diary - Just Before Asia Pastry Forum

Writing couple of weeks as " ASIA PASTRY FORUM 2017" was approaching soon

I don't think we could expected a better response with 175 Pastry chefs enrolling from More then 30 countries. 20 In house #Pastrychefs and 50 students from Advance level actually making a fantastic world class event

#PastryAcademy in different countries is exceptionally well with 2 pastry chefs teams are coming from pastry Academy in India for "ASIA PASTRY CUP 2018" & "SIGEP FEMALE WORLD PASTRY CUP 2018".

Philippines was not behind where chef Janelle Wins the Nationals and Bag the ticket to Represent the country for  "SIGEP FEMALE WORLD PASTRY CUP 2018".





Chef Janelle will be representing Philippines in the Female World Pastry cup in Rimin, Jan 2017


Malaysia is definitely on the top with Xiaoly who was our First Graduate and today successfully running 2 Pastry shops and catering company wins the Amateur Pastry chef competition in Shanghai. #Malaysia is going to announce their National Team shortly and I am sure that its going to be a Pastry chefs from Academy looking at their Performance in Recent National Competition FHM 2017.

Lastly the Annual chefs meet which I always wanted to do where the students can meet the #masterchefs and other Participating chefs. This is our formal approach to introduce the Pastry students to Industry chefs as well as the Master chef. I am sure they have a good exposre making some new friends in the Industry

Plan a tour to our Pastry school

PLAN A TOUR TO SCHOOL

Couple of weeks Back we were having a great discussion as how to Invite the students or Motivate them to visit Academy.

After so many accolades and credential sometime it a bit strange when Parents gives us feedback that they never knew Our school. Many of their Kids are already studying somewhere else and join us after their program. After Visiting academy we see them Happy, surprised & sad too

Our question is very simple to them. Have you done enough research ? because if they have then I am sure they will definitely come across Academy of Pastry Arts Malaysia

Anyway we took 2 Different Initiative as a result, one was to Make a video of Academy Tour and Blast it give a better Idea about school. Second is to Start a free trial class to encourage them visit academy and learn some skills

Every Saturday we organize this  Free trial class in Pastry & Culinary both and the result is amazing



So next time if you wish to learn a skill or just want to visit us then you can come for a tour on any week day or you can join our Free Trail class on Saturday

There will be office team help you out to give more information about the school, Program and Facilities. You can talk to chefs or students and get a very more clear information in case you need

why we need " Academy of Pastry & Culinary Arts Malaysia "

May be it sound like self promotion but so be it

Fact have to shared properly and when in the world of marketing and social media when so many paid channels are ready then I am sure there should be more channels to create awareness and right message


7 year down the line Academy not only groom highly skilled students but, the chefs teaching also ensure that, they are always motivated and keep on trying out new ideas and techniques

Most of these so called Pastry / Culinary school does not even have enough credibility, skilled chefs or direction. they hide behind big marketing budget, funding and brilliant digital Marketing. loooong program, teaching maths , science , ENGLISH...Surprised ? well how to open a pastry shop. Absurb, you dont how to handle a spatula or whip a cream and we teach you to become a manager ???

I am surprised then why kids or their parents cant think. Can surf better. cant actually visit the school and understand whats going to happen to their kids. Or we just don't care



I was surprised when some parents come to us and told us why cant meet them every 3 month. Come on, Its a professional school and parents need to show some kind of concern as how their kids are doing and whats going to Happen to them. why school need to call them like PTM ( Parents teacher meeting)

but, then we realize that yes, Its a great idea where we can actually involve the parents every 3 month and inform them about the growth of these young pastry chefs. we want to treat these chefs with respect and also same time give them space as well, show them the way. so, lets start with taking initiative by chefs & parents


I think the type of culture we developed in last couple of years is very comfortable, very practicl and very professional. It give that confidence to students to slowly grow up. express themselves better and also enjoy it

We always see them happy, glowing face and excitement of new topic every week

Well sometime stress of performing but with the growth you are going through its normal I think

But mostly we complete the process by showing them path much ahead, introducing professional chefs and then slowly push them towards Industry by Introducing their profile to to Hotels and Restaurants

SO FLAKY - Our monthly newsletter

This year is more about the position of Academy into the International Market. May be it sound like a business,which I always hated to accept.

Some where we feel the Philosophy of Academy need to Travel many more countries and we are now looking at Indonesia, Singapore, Vietnam, Australia and Middle East.

I am sure in next couple of month, we would be more clear as which country are we going to announce and by our Annual Chefs Meet during Asia Pastry Forum in November, we will be able to have a formal announcement also

Chef Kean Chuan will be representing  the national team and "Academy of Pastry Arts Malaysia" for Mondial de Sucre in Paris, January 2018. India have already qualified for Asia Pastry cup in Singapore, 2018 and Chef Alisha from Academy in India will be going for selection for SIGEP Female World Pastry cup in Rimini in Italy. so Lots of travel and International positioning.



The free Trial class on the week end is really catching up lots of eyes and suddenly we saw the no. of visitor on the weekend have Increased. Its a good thing that actually take out time to visit the school, get their queries answered , a great session of learning and tasting some great food

Asia Pastry forum 2017 is round the corner with less then 3 month left.With the year Line up of 17 Pastry chefs for 24 Days, I think this event is going to stay long. Needless to say that APF will officially be taken on a different level in coming years with many more corporate houses, Sponsors and Pastry association playing a bigger role.

Do we actually want our Pastry chefs to grow or its a Personal Political Agenda ?

May be I can see only one side of it but, I would definitely like to see another side of this as well

5000 Pastry chefs in the country is controlled by 2-3 Pastry chefs of the associations which does not have more then 50 - 60  members

CHEFS ASSOCIATION

My point is Chefs association in the countries. A fantastic #opportunity where a group of responsible senior chefs come together and create a platform for the entire country. I am sure they work really hard within and out side countries, to create a conductive atmosphere, where a structured ( or not so ) system is created, where generally young chefs are given opportunity to excel in their skills through different means. then to associate themselves with international association and take further steps to move on. #WACS is one of the great associations recognized world wide and I am sure the most prestigious one too. all the local associations would like to connect with them as make an International atmosphere in there own countries

Reality !!!

After some time , the so called great chefs in their own countries become ghost of their own larger then life Image. they think what ever they decide is good and young chefs should not question them. Patriotism become a poor reasoning securing their personal Interest

Poor local chefs look at them as heroes and always are in awe of them. Many of them are happy enough to have a photograph with them for social media. Many of them does not even get a chance to talk to them also forget the benefit of Joining the associations

The very idea of forming these associations goes out to dustbin

I was never apart of any associations all my life and believed that what ever I can do, can be done at my own level and limited resources. I could see the Layers of chefs at local level , state level, National level , regional level and then world wide.


Now lets talk about their contribution -
#Singapore could be an Exception but, I hardly know any association which have a structured plan to reach out the chefs of their country. Training is out of question and if it done to promote them at personal level.

Competitions once a year is another tool but again, its more about promoting themselves during these events, then actually nurturing out a younger generations. Then comes the personal favourite

The most dangerous part where they start their own personal agenda while selecting the winner or choosing the team for National representation.

Very funny, very dirty and very very shrewed way of thinking.
Any one reasoning with them is either barred , cornered or denied a reply, what ever suits them better. and if they are from another country then the terms like outsider , Patriotism comes to play

I have seen so many of them now, that I just start ignoring them. Chefs who I used to look up as heroes are now seems very different. I don't remember if these were the same people whom I used to know as colleagues

International Pastry / Culinary school in Asia - Truth behind the branding

I never wanted to write about this issue as some of my friends are Involved in it but, when I realize the Impact of this, I could not stop thinking about it

I was having a talk with few of my friends who runs Pastry & Culinary schools in different Part of Asia. Very proudly they tell me about their so called collaborations and associations some time from Australia , sometime from USA and sometime with some chefs body

During one of the market research, I was shocked to know that taking a collaboration with western/ European brand actually work out well in Asian Countries.It give them more name and branding and an upper edge to their competitors. Rediculous Idea
A trend which was started ensuring that students can take benefit of these international collaboration. Unfortunately, what we see is different business development  managers without understanding the countries, economy and affordability of the students, just try to dump their program to these school.

School without understanding their own strength or instead of working on their weakness follow this easy way. so who is the winner no body know. yes, for sure students are the looser.

First thing first -

The deal with this so called "European Branding or associations" definitely bring their own ways of expertise and skill but, at what cost? Double the cost of what you normally charge in your other regular programs. So basically you are discriminating your own programs. you operation cost become so high and who will have to Pay for it? Off course the students

Second -
You offer degree, Diploma and then an International diplom,. all from same campus. This is Hilarious. How would you justify these different program to students under same campus.
Did they actually try to find out  what is the requirement for a hotel or restaurant to employ as Fresh Graduate? what is the first salary they earn?  does the Industry pay different to Degree holder then a Diploma holder or this International diploma Holder????

I am sure they don't, as they have their own salary structure and budgets

then why all this??????

Its like buying a Branded shoes to a Local shoes available. I am truly ashamed of comparing this but this is how the education system works in Asia. Its all about Money and money and just Money. nothing Else

I am equally surprised why not Industry come forward and acknowledge openly, what exactly are they looking from a fresh graduate? what are their selection criteria which can clear these myths from parents and students?

Don't know if it possible or not but right people need to come in front and take an initiative. This is going help them better to get better workforce. They seriously need to come front as tell the school what exactly they expect from a graduate students

With the market going viral in terms of new idea, new concepts its very important to groom the younger generation chef rather them misguiding luring them with famous names and selling the education at a much higher price

INDIA DIARY - Finally we saw International Pastry schools in India

Ever time I goes to India, I see a great bunch of Motivated chef

Economy is growing and so is the need of Industry. surprisingly I don't see Pastry chefs in India still understand the importance of training. Hotels does not have mean to train them,as they pay them huge salaries, and chefs feel that is the duty of hotels to help them upgrade their skills

Hotels school (since Majority chefs gradate as hotel Management ) are in bad shape in terms of Culinary or Pastry Training. I am sure they don't even realize this part. students enrolling there to become chef does not have any ideaas, what  is going to happen to them

Students who have a bit better resources , want to travel Europe , US and Australia 
I am sure it does not make them a better chefs knowing, that "ACADEMY OF PASTRY ARTS ARTS" have opened their campus in Gurgaon and Bangalore. 2 truly International Pastry schools in the country

Academy of Pastry Arts India was Opened in 2015 in Gurgaon and recetly in January 2017, opened their second school in Bangalore. I think its a great start for India to have 2 world class International Pastry school in North & south. This ensure that students dont have to leave India for Pastry education and also for the students who wish to become chef, does not have to go through a 3 Years Hotel Management program

The Classic series program from Malaysia is run exactly is the same way. Also chefs from Malaysia do visit to Academy in India to take workshops on regular basis

 I see  a new market of home bakers. Career changers from corporate who want to start some thing of their own. I am not a great fan of Fondant cakes with dues respect to all. because all the home the home bakers want to do the same thing

Year 2015 and 2016 were great as Academy represent India and reach Asia Pastry Cup where they win Bronze. Theu also qualify them for World Pastry Cup 2017.

Philippines Diary - Out of Campus Partnership with Treston International college, BGC

Philippines is a country where the younger generation dreams a lot.
In fact everybody I met dream to do well for themselves, Family and Kids? and they are ready to take chances.

"That was the only reason Academy actually came to open their campus in Makati"

Its very difficult to engage with prospective students who wish to enter hospitality Industry. Awareness, Location and Finance is definitely the biggest reason.

Couple of weeks back, Academy in Philippines try an Initiative where, we can conduct some series of workshops sharing some new techniques. we were thinking to grow up an Idea sharing community where students who are undergraduate or graduate of Hotel Management / Culinary arts can come together and learn something new. Some thing to teach about Pastry techniques which they can use in their current or future career.




Since all the students was suppose to share their current status, we were shocked to see names of colleges we have never heard of.

Equally shocked were the students when they visit our campus. They didn't realize what are we teaching as they didn't even have an Idea of what we are doing? but then again , whom to blame? Its their career and they have to be more vigilant while choose colleges

My last visit to Treston college was brief but I was impressed with the Facilities and their way of thinking. If you are in education Industry then you have to be thinking way ahead. Its a responsible job where you need to understand as what your students will be doing after they graduate.



you need to have a road Map where both school and students are on the same Page

In a country like Philippines, where Job is always a problem. Its very Important for colleges to think about placement of their students. specially if they promote them as professional colleges.

The program is Brain child of Treston College where the students will be taken through the business aspect of the Program and academy will take over the practical and Pastry Training aspect of the students




This exactly was my Point , if colleges exactly does what they need to do then half of the problem is solved

I seriously believe that this Partnership works well, as It will be good for Future Pastry Entrepreneurs who wish to start some thing of their own. Anything which is done with Great Intention and clear focus will do good.

Next stop will be Thailand, Indonesia and Lebanon. Lets see which one come first !!!
