Introducing - Professional Bakery & Chocolatier

As a responsible Pastry school and Pastry chef , we are always expected to Introduce Program which are useful to different categories of chefs and students

After a care full study , we decide to Look into few components giving a more professional and business side approach

#ProfessionalBakery - A 2 weeks program where we wanted to groom students and professional into a more practical scenario for opening their own #bakeries , upgrade their #bakingskill or someone who want to concentrate only in baking science

Bakery, we feel some how get overshadowed under the beautiful looking french pastries or chocolate and we wanted to keep on upgrading it, inviting different chefs all the time.Sharing their own style and unique way of working. This Program have 4 components where we start with straight dough method breads , moving to sour dough , artisan breads and levain. #Venoisserie is a special attraction of this program finishing it with Asian breads , sandwiches and Tarts

Professional Chocolatier Program - We always believe that chocolate making is still not at its very best in the Pastry, knowing that it has all the potential to become one of the specialized area of career for any young entrepreneurs. Its very detailed , needs a lots of understanding and skills. Respect to temperature is something very very important for a chocolatier 



As a huge fan to Master chocolatiers Like Christophe Morel , Jean Marie Auboine and Frederic Hawecker , we realize the potential of this craft and wanted to develop it a a larger level. it gives you a great opportunity to produce these for a smaller scale home business , On line business or large catering






The 2 weeks Program cover all different component of chocolate making and confections like Bon bon, Enrobed , Bar , Nougat , Fudges, Jam , Spreads , Toffee , Pate de fruits and candy Making. Also we are covering the unique "











" BEAN TO BAR " concept of chefs who want to create their own small chocolate production using the local produced bean. Its a new concept which is still followed by many small scale chocolatier who wish to make their own chocolates. Its a pure chocolate and matter of pride for a pastry chef who wish to create their own brand and flavours.
Also a great technique to teach to young students and entrepreneurs
We always wanted our students to under the bean , roasting and then infusing their own flavours into the chocolates

MEET THE AWARD WINNING PASTRY CHEFS - YEAR 2018

Its been a long time since I have written. I think good 5 Month
Writing something  need a good content rather then, just always keep on writing same thing again and again.

SIGEP FEMALE WORLD PASTRY CUP 2018, ITALY

Chef Janelle and Chef Eureka were fantastic in SIGEP #Worldfemalepastrycup and even though they could not win anything, I believe what they got out of this competition will take them long way

MONDIAL DES SUCRE - DGF World Pastry Cup 2018 - France

This year had a great start when Chef Kean Chuan, Our in house #pastrychef got 2nd  Position in Mondial des Sucre , A DGF World pastry cup which is gaining a great reputation world wide. Also it was a great achievement because he maintain the second Position from Chef Chong Ko wai who was also world No. 2 in Year 2016 while representing Malaysia

ASIA PASTRY CHAMPIONSHIP 2018 - Singapore

Best part was with Chef Tan Wei Loon, our in house pastry chef who formed a team with Chef Otto and win "Asia Pastry championship 2018" in Singapore. It was a fantastic effort shown by the 2 chefs who hardly get time to practise together but I believe this is where experience comes handy.

Next is "Coupe du Monde de la patisserie 2019" in Lyon which I am sure is always a dream for any pastry chef worth his/salt to showcase their skill on the highest level. Malaysia will definitely go ahead eyeing for the podium looking at the team and the confidence they have

Third is Introducing Chef Ming Ai , a very quiet gentleman who is always behind the scene. Very talented, very creating. First he will be representing #Malaysia in #Worldcongress2018 in Malaysia. He is fortunate to represent his country at the home ground and we all are expecting a great result from in July.

This year is going to be great for him. After the world congress, he will be formally Joining Team Malaysia, for #CoupeduMondeDeLaPatisserie 2019 in France we well as 3 rd Chef.

I am sure coming year will very productive for him

Expansion plan 2018 for "Academy of Pastry Arts "

Welcome you all in the year 2018

I am sure we all have been waiting for the year with new dreams , #resolutions and some great commitments. Well , Academy also have some #dreams for the future generation #Pastrychefs and just to ensure that the we always stays focussed on what we do best ...we present you the great news of our 3 New campuses in 3 different #countries


Looking at the speed " Academy of Pastry Arts " is growing, I think the philosophy of what we do is being accepted very well. Personally and #professional both way anything which is done with passion and honesty is always accepted well

First thing first , Female World Pastry Cup 2018 in SIGEP, Italy



Chef Janelle is representing Philippines for this prestigious Event



Chef Eureka is representing India for "Female World Pastry Cup 2018" for the first time




Secondly Team India for " Asia Pastry Cup 2018 " in Singapore in April

All the #pastrychefs are working extremely hard for these world class competitions, and I have no doubt that whatever is the result, they will come back as much better chefs and human being


The first Master class series for the year 2018 is open for Registration. I think the classes offered by academy In house pastry chefs are very much in demand looking at the value for money and level of skills taught in these workshop.

 Philippines Pastry Forum is back with 2 Visiting guest chefs and 2 In house Pastry Chefs taking 4 different workshops in our Campus in #Makati, Philippines

Chefs meet, Asia Pastry forum & News letter - Year 2017

Let me start with wishing you a very #CHRISTMAS
May all your dream come true in right spirit and keep you healthy

Secondly I would to applogize for writing a bit late

"Asia Pastry forum 2018" was very exhausting but in true mean a great #Pastryworkshop event which is positioning itself as the finest in the world in true means.


Best Pastry chefs not only took some great workshop, but also took out time for our #AnnualChefsmeet. Fantastic
opportunity for our full time students as well as Participating chefs from more 30 countries to spend some quality time in a relaxed mode after classes

 I see our pastry chefs from India Malaysia and Philippines coming together and sharing some light moment. with a Jam packed schedule, travel , competitions and various event it was a great #professionalplatform for them as well to learn some new skills, learning and meet old and new friends

Students were the clear winner in this event. I knew that we as pastry students and chefs could never expect this kind of exposre for ourself. so this unique for them so see such a great chefs all togther right in front of them



To meet the Legendory #MOF Chef Jean Francois arnaud is definitely a dream come true for young Pastry chefs who are just about to step in  the Industry

Best time to meet their friends in more relaxing environment

October Diary - Just Before Asia Pastry Forum

Writing couple of weeks as " ASIA PASTRY FORUM 2017" was approaching soon

I don't think we could expected a better response with 175 Pastry chefs enrolling from More then 30 countries. 20 In house #Pastrychefs and 50 students from Advance level actually making a fantastic world class event

#PastryAcademy in different countries is exceptionally well with 2 pastry chefs teams are coming from pastry Academy in India for "ASIA PASTRY CUP 2018" & "SIGEP FEMALE WORLD PASTRY CUP 2018".

Philippines was not behind where chef Janelle Wins the Nationals and Bag the ticket to Represent the country for  "SIGEP FEMALE WORLD PASTRY CUP 2018".





Chef Janelle will be representing Philippines in the Female World Pastry cup in Rimin, Jan 2017


Malaysia is definitely on the top with Xiaoly who was our First Graduate and today successfully running 2 Pastry shops and catering company wins the Amateur Pastry chef competition in Shanghai. #Malaysia is going to announce their National Team shortly and I am sure that its going to be a Pastry chefs from Academy looking at their Performance in Recent National Competition FHM 2017.

Lastly the Annual chefs meet which I always wanted to do where the students can meet the #masterchefs and other Participating chefs. This is our formal approach to introduce the Pastry students to Industry chefs as well as the Master chef. I am sure they have a good exposre making some new friends in the Industry

Plan a tour to our Pastry school

PLAN A TOUR TO SCHOOL

Couple of weeks Back we were having a great discussion as how to Invite the students or Motivate them to visit Academy.

After so many accolades and credential sometime it a bit strange when Parents gives us feedback that they never knew Our school. Many of their Kids are already studying somewhere else and join us after their program. After Visiting academy we see them Happy, surprised & sad too

Our question is very simple to them. Have you done enough research ? because if they have then I am sure they will definitely come across Academy of Pastry Arts Malaysia

Anyway we took 2 Different Initiative as a result, one was to Make a video of Academy Tour and Blast it give a better Idea about school. Second is to Start a free trial class to encourage them visit academy and learn some skills

Every Saturday we organize this  Free trial class in Pastry & Culinary both and the result is amazing



So next time if you wish to learn a skill or just want to visit us then you can come for a tour on any week day or you can join our Free Trail class on Saturday

There will be office team help you out to give more information about the school, Program and Facilities. You can talk to chefs or students and get a very more clear information in case you need

why we need " Academy of Pastry & Culinary Arts Malaysia "

May be it sound like self promotion but so be it

Fact have to shared properly and when in the world of marketing and social media when so many paid channels are ready then I am sure there should be more channels to create awareness and right message


7 year down the line Academy not only groom highly skilled students but, the chefs teaching also ensure that, they are always motivated and keep on trying out new ideas and techniques

Most of these so called Pastry / Culinary school does not even have enough credibility, skilled chefs or direction. they hide behind big marketing budget, funding and brilliant digital Marketing. loooong program, teaching maths , science , ENGLISH...Surprised ? well how to open a pastry shop. Absurb, you dont how to handle a spatula or whip a cream and we teach you to become a manager ???

I am surprised then why kids or their parents cant think. Can surf better. cant actually visit the school and understand whats going to happen to their kids. Or we just don't care



I was surprised when some parents come to us and told us why cant meet them every 3 month. Come on, Its a professional school and parents need to show some kind of concern as how their kids are doing and whats going to Happen to them. why school need to call them like PTM ( Parents teacher meeting)

but, then we realize that yes, Its a great idea where we can actually involve the parents every 3 month and inform them about the growth of these young pastry chefs. we want to treat these chefs with respect and also same time give them space as well, show them the way. so, lets start with taking initiative by chefs & parents


I think the type of culture we developed in last couple of years is very comfortable, very practicl and very professional. It give that confidence to students to slowly grow up. express themselves better and also enjoy it

We always see them happy, glowing face and excitement of new topic every week

Well sometime stress of performing but with the growth you are going through its normal I think

But mostly we complete the process by showing them path much ahead, introducing professional chefs and then slowly push them towards Industry by Introducing their profile to to Hotels and Restaurants

The feel of satisfaction, seeing them doing well, confidence of a job in hands while still finishing their program in last stage
